“POGGIO ULIVO”
Extra Virgin Olive Oil
The “Poggio Ulivo” extra virgin olive oil from Fattoria di Monticello is born in the heart of Umbria, among hills of medium altitude where climate, soil, and agricultural tradition create ideal conditions for high-quality production.
Here, olive oil is not just a product, but a natural continuation of rural culture—rooted in ancient practices, daily care, and deep respect for the raw material.
From the olive groves: care, time and selection
Everything begins in the estate’s olive groves, located in Massa Martana and Ripalvella di San Venanzo, where the trees are carefully tended throughout the year through attentive and sustainable farming practices.
The olives are harvested exclusively by hand, selecting the fruit at the optimal stage of ripeness in order to preserve their aromas, freshness, and balance.
Harvesting is a crucial stage: it is here that much of the oil’s final quality is determined.
Timeliness and processing
After harvesting, the olives are quickly delivered to the mill and processed within a few hours in order to prevent oxidation and preserve all their organoleptic qualities.
Extraction takes place exclusively through cold mechanical processes, with constant temperature control at every stage of production.
This allows for the production of an oil that is:
- rich in aromas
- well-balanced on the palate
- naturally high in polyphenols and antioxidant properties
Tradition and precision
The production process combines the heritage of Umbrian olive oil tradition with a modern and carefully controlled approach at Fattoria di Monticello.
Every stage—from harvesting to pressing—is closely monitored to ensure consistent quality and the purity of the product. The resulting oil is a premium extra virgin olive oil, obtained exclusively from estate-grown olives and without any invasive treatments.
The connection with the land: an authentic expression of true Umbria
As with wine, olive oil is deeply connected to the land where it is produced at Fattoria di Monticello.
The estate’s olive groves lie among the Umbrian hills, where altitude encourages ideal day-to-night temperature variations, the soils contribute to aromatic complexity, and the climate allows for balanced olive ripening.
This environment gives the oil its distinctive characteristics: elegant vegetal aromas, balanced flavour, and a pleasant, lingering finish.
