From the olive groves: care, time and selection

Everything begins in the estate’s olive groves, located in Massa Martana and Ripalvella di San Venanzo, where the trees are carefully tended throughout the year through attentive and sustainable farming practices.

The olives are harvested exclusively by hand, selecting the fruit at the optimal stage of ripeness in order to preserve their aromas, freshness, and balance.

Harvesting is a crucial stage: it is here that much of the oil’s final quality is determined.

Timeliness and processing

After harvesting, the olives are quickly delivered to the mill and processed within a few hours in order to prevent oxidation and preserve all their organoleptic qualities.

Extraction takes place exclusively through cold mechanical processes, with constant temperature control at every stage of production.

This allows for the production of an oil that is:

  • rich in aromas
  • well-balanced on the palate
  • naturally high in polyphenols and antioxidant properties

Tradition and precision

The production process combines the heritage of Umbrian olive oil tradition with a modern and carefully controlled approach at Fattoria di Monticello.
