The Poggio Ulivo olive oil of Fattoria di Monticello is an extra virgin olive oil produced with the traditional technique of cold pressing. The temperature is monitored at every stage of olive processing, so as to have continuing control over all stages of the process. The olives are hand-picked in our groves, located on the hillside between the provinces of Terni and Perugia, is taken promptly to the mill and processed within a few hours of delivery in order to maintain all its sensory characteristics, aroma and taste.
